Oh South Beach, How You Disappoint

Two weeks ago I started my new job at Target as the Jewelry Specialist (love it! It’s an organizer’s dream job). This has been a radical change in my lifestyle – read “on my feet for 6-7 hours per day taking probably somewhere around 35,000 steps – My legs are SORE”. For almost an entire year, I have been “working from home” selling Marine Electronics through my husband’s business – read “sitting at the computer all day being sedentary and lazy”. As everyone knows, the economy has tanked lately causing sales to plummet. This started my job hunt and eventual hiring at Target. ANYWAY, back to the point.
I now get a 30 minute lunch period during my shift in which I must have something that can be quickly heated/cooked and eaten. One day last week I took a South Beach Diet frozen meal. It was supposed to be Herb Chicken with Green Beans Almondine. I quickly found out that it was more like “Fatty chicken pieces in some strange sauce with soggy green beans and dried out almond slivers”. See evidence below:
Gross. If you’ve ever bitten into green beans and had your mouth fill with water instead of green bean flavor, you know exactly what I’m talking about. So, I need suggestions. Anyone have any ideas of quick, easy meals that I can have ready for a 30 minute lunch? Yesterday I had a lean pocket and an apple, which was MUCH better, but you can only eat so many lean pockets a week!
